Making Elderflower Cordial

Here we see Kate Harden enthusiastically taking us through the various stages of making elderflower cordial, following a favourite recipe from childhood. She also carefully decorates an elderflower cake - delicious! Dissolve 3lbs/1.4kg sugar in 1¾ pints/1 litre of boiling water. Add 2oz/55g citric acid crystals, juice of 1 lemon, 20 elderflower heads. Leave 24 hours. Strain and bottle.

You pour boiling water into a plastic cup? – I thought you were all about being Natural?
Elderflowers are great! Because it's a flower, it's natural to think that they will taste like nectar or perfume, but they really have a pollen flavor, reminiscent of cattail or pine pollen. It's nice that you pointed out to look for the fresh anthers, which carry the pollen.
What an amazing woman.
First time I've learnt of a cordial, it's interesting how you used the Elderflower floating with the heads upside down.
